This is one of the easiest and most flavorful meals you will ever make! This recipe is simple but elegant, and it is healthy but very decadent. It is a staple in the Greek household and is fixture on most Greek restaurants menus.
This meal is perfect for entertaining and it takes no time at all to prepare! It can even be prepped the day before if necessary. You will make this recipe time and time again, because it’s simple and major crowd pleaser!

I used an agrumato lemon olive oil from Ladi Biosas to rub down the chicken with. It adds an extra lemon zest to the dish. Using a high quality olive oil is very important, and you will be able to tell the difference with the finished product. The olive oil will create a crispy skin finish and add tons of flavor. The two secrets to this dish is the flavor from the lemon wedges and the olive oil. The juices from the chicken, oil, and lemons marry and become a delicious sauce, I always take a large spoon and bast each piece of chicken before serving.

Roasted Greek Chicken

Serves: 8 to 10 people Cooking Time: 2 hours

Ingredients

  • 1 6 to 7 pound roasting chicken
  • Salt and pepper to taste
  • Fresh dried Oregano 2 to 3 Tablespoons or add more if desired
  • 1/4 Cup butter
  • 2 Lemons
  • 2 Tablespoons of Olive oil, Liadi Biosas is the best quality

Instructions

Preheat the oven to 350

Place chicken in roasting pan or the staub upright chicken roasted (seen in my photo)

Breast side must be up if it is in a traditional roasting pan

Rub the chicken with olive oil Ladie Biosas lemon infused olive oil adds a real special flavor

Sprinkle with salt and pepper and oregano

Melt the butter and pour over the chicken

Squeeze two large lemons on the chicken and leave the halves in the pan for extra zest

Bake uncovered for 2 to 2 1/2 hours

Bast the chicken with the juices during the cooking process

Notes

Before cutting the chicken let it rest for 15 mins with a towel over it to keep it warm Add potatoes to the bottom of the traditional roasting pan to complete the meal
