I was working this week on menu development and added this wonderful Olive oil herb dip to one of my menu’s. This recipe is perfect for any season with just about any menu.  So pick up your favorite bread and a good quality extra virgin Greek olive oil and get ready to make a wonderful quick appetizer.  Why extra virgin Olive oil?  because it is the purest and has the most aromatic flavors, perfect for dipping your bread into.

Add a little kick with hot pepper seeds, you won’t be sorry!  Or sprinkle Parmesan cheese on the top of the oil mixture to add a special touch.

Olive Oil Herb Dip

Serves: 4 Cooking Time: 15 mins

Ingredients

  • 2 Garlic Cloves
  • 2 Teaspoon dried oregano
  • 2 Teaspoon chopped fresh rosemary
  • 2 Teaspoon chopped fresh thyme
  • A pinch of salt
  • A pinch of red pepper flakes - if you would like to make it spicy
  • A pinch of black pepper
  • 1/2 Cup of extra virgin olive oil
  • 3 Tablespoon of grated parmesan cheese
  • Crusty Bread torn into cubes

Instructions

Finely mince the garlic

Add to a bowl garlic, thyme, oregano, rosemary, salt, pepper

Smash the herbs with the garlic until the flavors blend

Pour the garlic herb mixture on a plate and drizzle the olive oil on top

Add cheese and capers for extra flavor
