Greek Easter (Pascha) is the most important holiday of the year in my faith. And let me tell you, Greeks know how to celebrate Easter. Each year I look forward to the traditions that bring families together to celebrate the resurrection of Christ. With thousands of years of Greek culture, culinary traditions have become as diverse as the families and islands that makeup Greece.
Unlike the modern Western traditions of glazed ham, deviled eggs, and bunny cakes; Greek Easter is firmly rooted in the foods that were available in spring on the farm thousands of years ago. Supermarkets were not an option. Each family has their way of bringing the 40-day fast of Great Lent to an end with a farm-to-table menu.
