Maybe it is my Greek background, but I am crazy about cooking and baking with citrus. This recipe is worth the try and it presents itself beautifully! It is light but has a richness about it. I would serve this for dessert, but I would also present this at a brunch buffet!

Serves: 1 loaf Cooking Time: 1 hour

Ingredients

  • 1 1/2 cups of flour
  • 2 tbsp of grated grapefruit zest
  • 1/2 cup of sugar
  • 1/2 cup of raw sugar
  • 1/2 cup of olive oil
  • 2 large eggs at room temperature
  • 1 tsp of baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp of salt
  • 2 tbsp grapefruit juice
  • 1/3 cup of buttermilk
  • Syrup
  • 2 tbsp of sugar
  • 1/3 cup of grapefruit juice
  • Glaze
  • 1 cup of confectioners sugar
  • 2 tbsp grapefruit juice
  • pinch of salt

Instructions

Grease a 9x5 loaf pan

In a bowl mix sugars and rub grapefruit zest together. This will help mix the flavors!

Whisk oil into sugar mixture until smooth

Add eggs and mix

Add flour, baking soda, baking powder and salt in a second bowl

Add buttermilk and grapefruit juice to flour mixture and alternate with oil and sugar mixture until gone

Pour batter into pan

Bake for 45 min to an hour testing with a toothpick to make sure it is done

Syrup:

Combine tbsp of sugar and 1/3 cup of grapefruit juice in a pan and cook on low heat until the sugar dissolves

When the cake is done let it cool for 15 mins

Poke holes into the cake with a toothpick and spoon the syrup in the holes and let rest

Glaze:

Combine confectioners sugar, grapefruit juice and salt in a bowl and whisk until smooth.

Pour over the top and let it drizzle down the cake

Notes

Tip: If you do not have toothpicks available, use a fork to create the holes for the syrup. Also, use a good quality olive oil, one that may have a fruity quality.
