Citrus Salad

Ingredients

  • 3 Blood Oranges
  • 2 Red Grapefruit
  • 2 Fennel Bulbs
  • 8 Ounces of Arugula
  • Dressing:
  • ¾ Cup Olive Oil
  • ¼ White Vinegar
  • Salt and Pepper

Instructions

Peel oranges and grapefruit, then clean and separate into sections.

Remove the stalks from the fennel and place off to the side. Cut the bulb in half, and then cut the half in quarters.

Peel off the wilted outer layers and slice the fennel crosswise. Wash thoroughly.

Wash and clean arugula.

In a large bowl place all the above prepared items. Drizzle whisked dressing, taking your time to stop and toss the salad.

Add salt and pepper to taste.

Before serving, squeeze ½ blood orange over the salad to add an extra sweet citrus flavor.

Notes

This is a great winter dish that takes advantage of fresh citrus fruits while they’re in season. As this is such a colorful salad, it looks beautiful when placed on a white plate or salad bowl.
