I always love making fun and interesting displays for customers. This cheese “cake” tower is no exception.  Everyone loves cheese! It is the perfect appetizer to serve that is still light but satisfying to most everyone.  My sister (who is also a chef!) made a similar display for her daughter’s wedding reception last year. It was a huge hit, it was placed on the bar during the cocktail hour. Her guests had easy access to grab a bite as they waited for a drink. With adulation to hers, I created this cheese “cake” tower for an outdoor, evening birthday party.

Beyond making sure your cheeses pair well with your menu, it is important to keep in mind the weather and your guest.  First, if the weather is very hot this display needs to be placed indoors so that it does not melt. The cheese reacts to warm temperatures and it will become loose and sloppy quite quickly. The other concern is the guest. It is important to pick cheese that is generally enjoyed by most people, while also choosing interesting, and aesthetically pleasing types of cheese wheels.

Don’t forget to use whats in the farm to help your display come to life. For example, if figs are in season, use fresh figs! If peaches are in season, use the peaches! I highly recommend walking your local farmers market, or doing some online research. Cheese pairs well with all fruits and it is important for that sweet, savory flavor. I would recommend choosing a lighter cracker that does not over power and take away from the cheese.  My favorite is the 34-Degrees Crisps, they come in a variety of flavors and are available at Plum Market, Whole Foods and Market Square store in the Detroit area. Don’t be afraid to get creative and make sure you pick the right platter or board, this also will make your display standout.

Ingredients

  • For a small tower pick four cheeses that compliment each other but are different
  • Fig jam
  • Nuts
  • Grapes
  • Dates
  • Dried fruits

Instructions

1

The cheese wheels will need to be in different sizes so that they fit well on top of each other

Layer each wheel with fig jam

Place chopped nuts around each layer

Add herbs in areas needed

Decorate with fresh fruit and dried fruits

Notes

Be careful when choosing soft cheeses, they melt in warm weather and the display will fall apart
