Asparagus DinnerPrint Recipe
- 1 bunch fresh asparagus
- 1 egg
- 1 tsp butter
- Parmigiano reggiano
- Black truffle (when in season)
- Truffle olive oil
Clean asparagus, snap off the ends.
With a potato peeler, peel each stalk from the base to the tip and wash thoroughly.
Add water and salt to a shallow saute pan, bring to a boil.
Add asparagus and cook al dente.
In a frying pan, add butter and fry egg. 5
Plate asparagus, drizzle with truffle olive oil, salt and pepper.
Add the fried egg and grated parmigiano reggiano on top.
It is important to not overcook the asparagus. It loses its flavor, vitamins and texture. Add shaved black truffle when in season for a special treat.
